Wholesome squash braised in a light savory sauce

In a large pot, add neutral oil (2 Tbsp). Add in the scallion whites (2) and garlic (2 cloves) and sauté until fragrant.
Add in the kabocha squash (½ lb), stirring gently. Sauté for 1 to 2 minutes and then add in enough water to almost cover everything
Then, add in light soy sauce (1 Tbsp) and Yondu light (2 Tbsp).
Cover and braise for about 15 minutes or until softened. Serve or pack away to enjoy for the rest of the week!
