Summer Veggie Pork Stir-Fry
Soy meat slices with summer tomatoes

Instructions
Bring a small saucepan or pot of water to a boil. Blanch carrots (½ cup) for about 1 minute, until the carrots are bright in color and slightly softened. Remove and set aside.
Heat neutral oil (2 Tbsp) in a wok or pan, then add in garlic (1 clove) and scallion (1) until fragrant, for about 30 seconds.
Stir-in the soy meat slices (2 cups), allowing each to turn golden brown.
Add in the tomatoes (1), allowing them to blister and soften slightly. Add more oil here if needed. Add carrots.
Season with Yondu or vegan fish sauce (1 ½ Tbsp) along with light soy sauce (1 Tbsp). Add more salt or MSG (to taste).
